watermelon gazpacho

Serves: 4-6
- 8 cups cubed watermelon
- 1 tomato
- 1 cucumber
- 1/2 purple onion
- 1/2 red bell pepper
- 1 red chile pepper
- 2 cloves garlic
- large handful basil leaves
- 3 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- Cut watermelon, cucumber, tomato, red bell pepper, onion, and chile pepper into chunks.
- Reserve about 1/2 cup of the cut up veggies for a garnish, and add the rest to a large blender.
- Peel 2 cloves of garlic, and add to the blender.
- Add basil leaves, red wine vinegar, olive oil, and sea salt to the blender.
- Puree into a soup.
- Pour into soup bowls, and garnish with cut up veggies.
- Serve immediately or chill in the refrigerator.
