paleo lemon squash bread

- 1 1/3 cups almond flour
- 2/3 cups sweet potato flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon xanthan gum
- ½ teaspoon nutmeg
- ¼ teaspoon sea salt
- 1 yellow squash, grated
- zest of 1 lemon
- ½ cup chopped walnuts
- 2 eggs
- ½ cup honey
- ½ cup almond or coconut milk
- ½ cup coconut oil
- 1 teaspoon lemon extract
- Preheat the oven to 350 degrees.
- Combine dry ingredients in a large bowl.
- Add squash, lemon zest, and walnuts and stir to coat.
- Combine wet ingredients in a small bowl.
- Add wet ingredients to dry ingredients and mix together until well blended.
- Pour in a greased loaf pan, and bake for 1 hour or until the top is golden brown.
- Cool slightly before slicing.
