paleo lemon squash bread

Ingredients
  • 1 1/3 cups almond flour
  • 2/3 cups sweet potato flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon xanthan gum
  • ½ teaspoon nutmeg
  • ¼ teaspoon sea salt
  • 1 yellow squash, grated
  • zest of 1 lemon
  • ½ cup chopped walnuts
  • 2 eggs
  • ½ cup honey
  • ½ cup almond or coconut milk
  • ½ cup coconut oil
  • 1 teaspoon lemon extract
Instructions
  1. Preheat the oven to 350 degrees.
  2. Combine dry ingredients in a large bowl.
  3. Add squash, lemon zest, and walnuts and stir to coat.
  4. Combine wet ingredients in a small bowl.
  5. Add wet ingredients to dry ingredients and mix together until well blended.
  6. Pour in a greased loaf pan, and bake for 1 hour or until the top is golden brown.
  7. Cool slightly before slicing.
