grapefruit coconut macaroons

- 6 egg whites
- pinch of sea salt
- 1 tablespoon vanilla extract
- 1/2 cup coconut sugar
- 3 cups shredded coconut
- zest of a grapefruit
- 1 tablespoon fresh grapefruit juice
- Preheat oven to 350 degrees.
- Beat egg whites with an electric mixer until soft peaks form.
- Fold in sea salt, vanilla extract, coconut sugar, shredded coconut, zest of a grapefruit, and grapefruit juice.
- Gently form balls, and place on a parchment lined baking sheet.
- Bake for 15 minutes.
- Makes about 36.
