bacon lettuce and tomato pizza on a cauliflower crust
Recipe type: main dish
  • 1/2 head cauliflower
  • 1/2 cup pine nuts
  • 1/2 cup finely ground flax seed
  • 2 eggs
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 3 teaspoons olive oil
  • 2 tomatoes, sliced into thin slices
  • 6 strips bacon, cooked and cut into 1 inch pieces
  • 1 cup or one large handful lettuce, chopped
  • 1/2 tablespoon plain Greek yogurt (can substitute olive oil and vinegar)
  • 1 avocado, peeled and pitted and cut into cubes
  • sea salt and pepper to taste
  1. Preheat oven to 400 degrees.
  2. Add cauliflower and pine nuts to a food processor, and process until finely ground.
  3. Transfer to a medium mixing bowl, and add flax seed, eggs, sea salt, and pepper.
  4. Spread mixture onto a parchment lined baking sheet in the shape of a pizza crust about 9 or 10 inches in diameter.
  5. Bake for 18 minutes.
  6. Remove from oven, and brush a teaspoon of olive oil on the crust. Lay another sheet of parchment paper on top, and gently flip the pizza crust over and remove the parchment paper that was on the bottom.
  7. Brush a teaspoon of olive oil on this side of the crust as well.
  8. Bake for 18 more minutes or until the crust is crispy throughout.
  9. Remove from oven, and brush another teaspoon of olive oil on the crust.
  10. Layer sliced tomatoes, sea salt and pepper to taste, and bacon pieces, and return to the oven for 8 more minutes.
  11. While pizza is baking, use your hands to massage the Greek yogurt into the lettuce.
  12. Remove pizza from oven, and top with lettuce mixture, avocado, and salt and pepper before serving.
Optional: Add 1/2 cup shredded mozzarella cheese to the pizza by spreading it over the crust before adding the tomatoes, bacon, and salt and pepper.
