Raw cacao is considered a superfood, as it contains a large amount of antioxidants and just about the most magnesium and chromium contained in any food.  It is different than the dark chocolate we buy in bars because it is not processed at all and therefore retains all of its nutritional benefits.  Magnesium happens to be the most deficient mineral in our diets, and it is important because it relaxes muscles, improves movement in the bowels, and relaxes the heart and cardiovascular system.  Chromium is excellent for maintaining blood sugar, so it is beneficial to those with diabetes and those trying to lose weight.  The antioxidants in cacao have been proven to literally dissolve plaque built up in our arteries which helps reverse heart disease and naturally lowers blood pressure.

In addition to raw cacao, this smoothie adds another serving of greens and healthy fat and fiber.  Enjoy!

Ingredients
  • 1 avocado
  • 1 cup spinach leaves
  • ½ cup mint leaves
  • 1 cup unsweetened almond or coconut milk
  • 1 heaping scoop vanilla protein (whey, egg, or rice)
  • 1 frozen banana
  • 2 heaping tablespoons raw cacao powder
  • 1 tablespoon ground flax seeds
  • 1 dropper vanilla creme liquid stevia
  • Optional: raw cacao nibs
Instructions
  1. Combine all ingredients in a Vitamix or other blender, and blend on high until smooth. Add more almond or coconut milk if needed. Garnish with raw cacao nibs if desired.

peanut butter and jelly smoothie

Another one for the kids…and those of us that still love the sweet and salty unbeatable combo of PB&J.  My son had a reading camp bright and early every morning last week (yikes!), and this was his good morning pick-me-up.  A little peanut butter for some protein, a little banana and berries for some energy, and he was off to a good start to his day.  And, hooray!  We used up the rest of our blackberries from the farm!

Ingredients
  • 2 cups unsweetened almond or coconut milk
  • 2 tablespoons organic creamy peanut butter
  • 1 cup fresh blackberries (or strawberries or raspberries)
  • 1 dropper of vanilla creme liquid stevia
  • 1 frozen banana
  • 1 tablespoon ground flax seed (optional)
Instructions
  1. Combine all ingredients in a Vitamix or other blender, and blend until smooth.

Orange Grapefruit Smoothie

Tis the season for grapefruit!  Today I am kicking off a week of grapefruit recipes. I know, today is a Friday, not exactly the day of the week to kick off this project; however, the weekends are most often my favorite time to “play” in my kitchen.  So despite it being towards the end of the week, I am kicking off my week of grapefruit.

First things first.  Why grapefruit again?  Well, it’s in season, locally widely available, and plentiful in my refrigerator.  Oh, and it does have some health benefits – it’s very low in calories at just 42 calories per 100 grams, it’s rich in the insoluble fiber pectin, vitamin A, Vitamin C, potassium, and flavonoid antioxidants such as naringenin, beta-carotene, xanthin, lutein, and the famous lycopene.

So, let the week of grapefruit begin…

Orange Grapefruit Smoothie

  • 1 grapefruit
  • 1 orange
  • 1 banana, peel removed (I froze mine)
  1. Cut the grapefruit and orange into wedges.
  2. Pick out the seeds and cut off the peels.
  3. In a Vitamix or other blender, combine the grapefruit, orange, and banana, and blend for 30 seconds or until creamy.
  4. Serve immediately.

Blueberry Kale Smoothie

  • 2 stalks kale
  • 1 orange, peeled
  • 1 cup blueberries
  • 1/2 frozen banana
  • 1 cup almond or coconut milk
  • 2 tablespoons chia seeds
  • 1 teaspoon grated fresh ginger

Combine all ingredients in a Vitamix or other blender, and blend on high for 30 seconds.

  • 1 large orange
  • 1/2 frozen banana

Candied Sweet Potato Smoothie

The morning after Thanksgiving, I woke up thinking about the sweet potatoes we enjoyed the day before.  I decided to try a sweet potato smoothie by placing my left over candied sweet potatoes in my Vitamix with a cup of almond milk.  It was so completely delicious!

I have since recreated the same smoothie without using Thanksgiving leftovers, so I can enjoy this treat year round.  Because sweet potatoes are one of my favorite foods, I always have a few steamed ones in my fridge to use in recipes or to just eat for a snack.  I was able to easily pull one out in the morning for my smoothie.

Candied Sweet Potato Smoothie

  • 1 cup almond milk
  • 1 steamed sweet potato, chilled
  • 1 teaspoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • 1/8 teaspoon ground cloves
  • 1 handful of pecans

Combine all ingredients in a Vitamix or other blender.  Blend for 30 seconds.  Enjoy!
