Savory Herb Scramble

Kristi’s scrambled eggs are by far the best I’ve experienced.  What’s her secret?  She adds a tablespoon of coconut oil per 2 eggs she scrambles.  After visiting Lavon Farms for fresh eggs, I tried her recipe, and it did not disappoint!  I added a variety of fresh herbs from my garden:  parsley, thyme, sage, and rosemary.

According the Mother Earth News, farm fresh eggs are far superior to store bought:  1⁄3 less cholesterol, 1⁄4 less saturated fat, 2⁄3 more vitamin A, 2 times more omega-3 fatty acids, 3 times more vitamin E, 7 times more beta carotene, and now 4-6 times more vitamin D!  Plus, nothing tastes better than fresh.

Savory Herb Scramble

  • 1 tablespoon coconut oil
  • 2 farm fresh eggs
  • variety of fresh herbs
  1. Whisk together coconut oil and eggs.
  2. Add the fresh herbs.
  3. Pour the egg mixture in a nonstick pan.
  4. Scramble the eggs over medium heat.
