Tis the season for grapefruit! Today I am kicking off a week of grapefruit recipes. I know, today is a Friday, not exactly the day of the week to kick off this project; however, the weekends are most often my favorite time to “play” in my kitchen. So despite it being towards the end of the week, I am kicking off my week of grapefruit.
First things first. Why grapefruit again? Well, it’s in season, locally widely available, and plentiful in my refrigerator. Oh, and it does have some health benefits – it’s very low in calories at just 42 calories per 100 grams, it’s rich in the insoluble fiber pectin, vitamin A, Vitamin C, potassium, and flavonoid antioxidants such as naringenin, beta-carotene, xanthin, lutein, and the famous lycopene.
So, let the week of grapefruit begin…
Orange Grapefruit Smoothie
- 1 grapefruit
- 1 orange
- 1 banana, peel removed (I froze mine)
- Cut the grapefruit and orange into wedges.
- Pick out the seeds and cut off the peels.
- In a Vitamix or other blender, combine the grapefruit, orange, and banana, and blend for 30 seconds or until creamy.
- Serve immediately.
