Pumpkin Bread

  • 1 3/4 cup brown rice flour mix from Authentic Foods
  • 1 teaspoon baking soda
  • 3/4 teaspoon xanthan gum
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 2/3 cup agave nectar
  • 1/3 plus 2 tablespoons grapeseed oil
  • 2 tablespoons molasses
  • 1 cup canned organic pumpkin puree
  • Preheat oven to 350 degrees.
  1. In the mixing bowl of an electric mixer, combine the flour, baking soda, xanthan gum, salt, baking powder, and spices.
  2. In a small mixing bowl, combine the eggs, agave nectar, oil, molasses, and pumpkin.
  3. Add the wet ingredients to the dry ingredients, and mix until well blended, approximately 2 minutes.
  4. Pour the batter into a greased loaf pan.
  5. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  6. Cool for 10 minutes before serving.
